I managed to wangle quite a high-fallutin' Windows Mobile phone out of Vodafone last time I renewed (an HTC Tytn II), and apart from "jailbreaking" and loading a proper HTC rom onto it, to get rid of the nasty Vodafone branding, I also use -

Googlemaps
Windows Live Search (similar to above)
TomTom (just a trial one-map version, but I plan on upgrading it)
FTP (an FTP client!)
Coreplayer with flashbundle (an old, free version - for Youtube videos etc)
Opera Mobile
Total Commander (file manager/Windows registry editor)
KeePassPPC (secure password/info store)
Kaiser Notifications (a little stay-resident app that makes the LEDs on the phone do useful things, like flash red for a missed call etc)

Mostly for fun, I also have:

MS Messenger
Microsoft Reader
Deepfish (an early beta of MS's next mobile browser)
Pocket Picture (drawing/art)
Pocket SharpMT (blog editor)
Leo's Void (planetarium)
Leo's Flight Simulator (as the name suggests!)
+ various other games.

When I get braver, I may experiment with some of the "cooked" roms out there, which are supposedly better than the official firmware releases..

PS - the Google sync thingy looks v useful - at the moment I'm keeping my calendar/tasks/email/contacts all in sync with my work's Exchange server, which is great, but it'd be nice to have a backup that wasn't all tied to the office.
